Well, well, well…. so much for the lovely break from cold winter temps.. I do believe these have been the coldest nights of the this season. It is soooooooo challenging to function in the bitter cold! And my friend Richard in Western Massachusetts said it was 77 there this week! Geez!

Chicken update. I have let everyone back out into their coop and pen. Daisy duck is limping but she is eating well and happy to have one other duck for a friend… they are all so social.
All of the chickens I had left inside made it back out… one still limps so she lets me lift her off her roost on to the ground as I think it is painful for her to jump down the 4 feet. I am thrilled she can get up by herself.

We got a bunch more snow and it has been bitter cold so they are not running around outside… just in case Mr Cougar decides to come back. Luckily they have a palace for home and enough outside covered and fenced space.

Many of you may not know this, but I have been living off the grid for 6 1/2 years. It feels good to be independent but there is not much sun here in the winter so the generator has to be on to charge the battery bank every other day…. using a lot of propane and it is noisy.
So we decided to bite the bullet and have power brought in. Big expensive job digging a1200 foot trench and all that went with it. But, we now have ‘shore power’. As the electrician calls it.

There certainly are upsides… like, I can use my toaster oven whenever I want, and do laundry and vacuum when I want… not just when the generator is on. You get the drift. Right now the big deal for me is freezing water for the chickens… I just happen to have a heater that you put under their water bowl that keeps it from freezing…. guess what I plugged in!!!
It really is the little things in life… ya know!

Buttermilk Chocolate Cupcakes


Makes 16 large or 9-10 jumbo Cupcakes

1 1/2 C soft white Wheat or Spelt Flour
1 C Cocoa Powder
1 C Rapadura, Sucanat or Coconut Sugar etc
1/2 tsp Real Salt or Sea Salt
1 tsp Baking Soda
1 1/2 tsp Baking Powder

1 C Buttermilk or Kefir
4 Eggs
2 tsp Vanilla
1/2 C + 2 T Butter &/or Coconut Oil, melted


Mix Flour and Buttermilk/Kefir in medium bowl, cover and let soak for 7 hours or Overnight in the fridge or a cool location

Preheat oven to 350

Beat Eggs until fluffy
Add Cocoa, Coconut Oil, Vanilla, Salt and sweeteners - beat until creamy and fluffy.
Add Flour/Buttermilk mixture and mix by hand.
Add Baking Powder and Soda and mix by hand until just blended

Fill paper baking cups 3/4 or more

Bake 20 minutes for large and 25 minutes for jumbo.


Peanut Butter Chocolate Cream Cheese Frosting

12 oz Cream Cheese
1/4 C Peanut Butter (smooth works best for this)
1/3 C Cocoa pwd
1/4 - 1/3 C Honey (raw if possible)
1/4 C Butter
1 tsp Vanilla
1 - 1 1/2 tsp Stevia blend

Put all into a medium bowl and beat until light and fluffy

You can gently warm the butter and honey together so it blends easier with the rest of the ingredients.

If you like frosting be sure to save some for the Cupcakes :)
