Spring has finally sprung.... wow, what a long winter!
Mysti and I took a lovely walk in the park to experience the waterfall at this time of the year. The smell of spring was in the air. I inhaled deeply and then... oh yeh there is that other familiar smell... the waft of pot in the air.
Kinda blew that Spring freshness... ah well.

I love the temperature, the smells, the breeze and even spring rain. This week I was pondering how Spring and Fall are my favorite seasons. But that hasn't always been the case. The past 2 or 3 years I didn't look forward to Spring and didn't care. It just meant more work to do and felt depressing. I remember thinking how unusual that was as I always enjoyed Spring so much and looked forward to it.
I didn't realize at the time that I had Gut Dysbiosis. That means the digestive tract or the gut microbiome can't digest food properly... lots of bacterial overgrowth, inflammation and not the right proportions of good bacteria. 9 out of 10 chronic conditions are related to gut inflammation and many depressions are caused by it. Using Functional Medicine and True Cures, my energy is back, brain fog and depression.... gone. Doesn't mean I don't feel down now and then, but that deep depression has lifted. It is hard to describe what a huge relief it all is. There are still some issues to deal with but really... it's like the difference between night and day!
I am truly grateful and after having experienced it I can understand how debilitating depression can be. I am grateful to be 'back on track'!

Carrot Spice Muffins


1 C Spelt or white whole wheat flour

1/2 C quick cooking oats

1 t baking soda

2 t baking powder

1 t cinnamon

1/4 t nutmeg

1/8 t ginger

1/8 t allspice

1/2 C rapadura, coconut sugar or similar



1 egg

1/3 C sour cream

2 T vegetable oil

1 T applesauce, unsweetened

1/2 t vanilla

1 1/2 C carrot, grated

1/2 C raisins, rehydrated (soak in warm water overnight (give or take))



Combine dry ingredients in a large bowl.

Mix remaining ingredients in another bowl.

Add liquid ingredients all at once to the dry mixture, stir just until flour is moistened.

Spray muffin cups with vegetable oil or use paper muffin cups

Spoon batter into muffin pan and bake at 350 for 18-20 minutes or until toothpick inserted in center comes out clean.

Makes 12 muffins
