Lots of Fragrant Garlic

This is stage one, drying, after harvest. After a week or so, they will be cleaned up and trimmed and then set out to cure.

I just harvested my garlic... 187 heads, to my surprise. And this is the first year that my harvest was perfect. Usually many aren't that great or one year, I had the dreaded white mold.. forgot what it is called, but you can't plant garlic in the same place again!
You are supposed to save the biggest and best for planting next fall... I find that hard as I always want to use the biggest and best in my cooking! haha

The topic of GMO/NonGMO has been coming up again and I am still surpirised by how uneducated people are on the topic. Most think that if they are buying non GMO produce, grains, etc and processed foods that they are safe.
No, you are not safe. It really isn't the GMO that is the big concern. The main reason GMO is a concern is because of the seeds that are genetically modified to withstand being sprayed by Roundup/Glyphosate. GMO corn is modified to stay alive even when it is bring doused with lots of Glyphosate to kill the surrounding weeds. Glyphosate is an herbicide that kills weeds and plants. That is why it is also used on conventional crops to speed up harvest... especially wheat in areas that have short or wet growing seasons. It is usually sprayed close to harvest. It sticks to the plant, the delicate husks and the grains. More and more farms are using Glyphosate to increase their harvest. But.... IT IS NOT SAFE.
Not for us, our pets, the soil and all the healthy bacteria in the soil. Glyphosate messes with the Shikimate pathway in bacteria and we have 10 times more bacteria in our bodies then we do cells. I will let the experts fully explain all of this to you. It will make sense and you will have a new understanding of why you want to avoid it!

Your Healthy Yummy Recipe

Smashed Potatoes with Pesto
I made this a few days ago and it was yummy (of course)

Baby Potatoes (enough for the # of people you are feeding)
Olive Oil to drizzle over potatoes
Salt and Black Pepper
Basil Pesto (you can purchase or make fresh, recipe below)

Preheat oven to 450
Boil potatoes, uncovered, until tender: 15-20 minutes

Line a baking sheet with parchment and place cooked potatoes on
Smash potatoes with back of spoon, pan, etc
Sprinkle with Olive Oil, Salt and Pepper
Roast for 20-25 minutes
Top with Pesto.....YUM!

Basil Pesto

2 C fresh Basil
1/3 C Pine Nuts &/or walnuts
1/3 grated Parmesan (please, use the good stuff)
3-5 Cloves Garlic
1/3 C Olive Oil
2 Tbs Butter
1/2 tsp each Salt & Pepper

Use a food Processor to blend to a paste.
I put extra in ice cube trays and freeze for later use on pasta etc.
